When a dear friend throws a Walter Mercado themed birthday party and requests a dessert, you go for it! Mantecaditos are Puerto Rican Shortbread cookies and they are amazing! Adding to the theme, I purchased these cute Astrology silicone molds and served them with a side of guava paste.

cup ½ unsalted butter, at room temperature
cup ½ shortening
cup ½ sugar
1 teaspoon almond extract
teaspoon ½ salt
2 cups ¼ all-purpose flour
guava paste for topping
Preheat oven to 350°F. Line a cookie sheet with parchment paper, or use a silicone mold.
In a large bowl, cream butter, shortening and sugar until light and fluffy, about 3 minutes. Stir in almond extract, salt and flour until well combined.
Divide dough into small balls, about 1 ½ teaspoons each. Press dough into silicone mold.
Bake for 15-20 minutes or until edges are golden.
Cool on wire rack for 5 minutes before removing to wire rack to cool completely. Serve with guava paste on side or spread on top and make a cookie sandwich.
